Ingredients
  

  • 2 cups greek yogurt
  • 3 cloves of grated garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp lemon juice about 1 lemon
  • 1 cucumber peeled, grated and squeezed to remove any excess liquid
  • 3 tbsp olive oil To taste

Method
 

  1. In a large bowl, combine yogurt, garlic, salt, pepper, and lemon juice.
  2. Fold in the grated cucumber.
  3. Drizzle in the olive oil and mix until smooth and creamy.

Notes

 
  • Raw garlic gets stronger as it sits. If you want a milder flavor, roast the garlic first or use just 1–2 cloves.
  • To prep the cucumber squeezing out the liquid is key to avoiding a watery dip. You can wrap the grated cucumber in cheesecloth or a clean towel and press.
  • For a creamier dip, use full-fat Greek yogurt. For a lighter dip, stick to 0–2% yogurt. Vegan yogurt/cream cheese will give it a thicker, tangier profile.
Serve as a spread for pita or wraps, with grilled chicken, lamb, or roasted vegetables, or as a dip for raw veggies, chips, or flatbreads.
Stir before serving if it sits in the fridge — some liquid separation is normal.
